Les Coucougnettes (du Vert Galant) sont une spécialité de Pau.
Les Coucougnettes ont été confectionnées par Franis Miot comme un hommage gourmand et polisson au bon roi Henri IV (à qui les historiens attribuent plus de 50 maîtresses et de 20 enfants).
C’est une amande torréfiée, enrobée dans du chocolat noir et enroulée dans une pâte d’amande aromatisée à la framboise, au gingembre et à l'Armagnac.
Une pure merveille.
